These quick & light oat muffins are tender, fluffy, and baked right in your air fryer! Made with wholesome oats, Greek yogurt, and sweetened with honey, they’re perfect for breakfast on the go—or a healthy snack any time of day.
• 1 cup rolled oats
• 1 cup Greek yogurt (plain or vanilla)
• 1 large egg
• 2 tablespoons honey or maple syrup
• 1 teaspoon baking powder
• ½ teaspoon vanilla extract
• ¼ teaspoon salt
• ¼ teaspoon ground cinnamon (optional)
• ½ cup fresh berries or chocolate chips (optional)
1. In a bowl, stir together oats, baking powder, salt, and cinnamon.
2. Add Greek yogurt, egg, honey, and vanilla; mix until combined.
3. Fold in berries or chocolate chips if using.
4. Preheat air fryer to 350 °F (175 °C).
5. Spoon batter into 6 silicone or parchment-lined muffin cups.
6. Air-fry for 10–12 minutes, until edges are golden and a toothpick comes out clean.
